We do it the hard way.
Our jerky starts as premium Australian beef and is marinated long enough for the flavour to properly soak in, not just coat the outside. From there, it’s slow dried over several days at lower temperatures, allowing the meat fibres to tighten naturally without being cooked or damaged.
This slower process preserves the integrity of the beef, lets the flavour carry right through every piece, and delivers a proper chew that gets better the longer you work it.
