Fatty vs Lean Biltong – Which One Should You Choose?
Author Robert Hall / Published: 5-NOV-2025
What’s the Difference Between Fatty and Lean Biltong?
Biltong’s all about balance — full-on beef flavour, slow air-drying, and that signature tender chew. But not all biltong’s made equal. Some like it fatty and rich, others go for lean and clean.
The difference comes down to one thing: the cut of beef.
Lean Biltong uses eye round or topside – little to no visible fat, high in protein, drier texture.
Fatty Biltong keeps the marbled fat cap on – richer flavour, softer chew, juicier mouthfeel.
Both are made the same way — But one is juicy and fatty and one is drier and leaner.
Fatty Biltong: The Rich, Indulgent Cut
If you love intense flavour and melt-in-your-mouth texture, fatty biltong is your mate.
Why You’ll Love It:
- Juicy, buttery bites thanks to marbling
- Stronger beef flavour (fat = flavour)
- Satisfying chew without being tough
- Perfect with a beer or whiskey
Best For:
Eating handfuls at a time.
Lean Biltong: The Clean, High-Protein Cut
Prefer your biltong light, dry, and packed with protein? Then lean biltong’s your go-to.
Why You’ll Love It:
- Low in fat, high in protein (great for gym goers & keto eaters)
- Longer quality shelf life due to less moisture and fat
- Crisp, clean flavour that highlights the spices
- Easier to portion and less oily in your hands
Best For:
Everyday snacking, hiking, gym fuel, and high-protein diets.

Which One Should You Choose?
There’s no wrong answer — just what suits you.
| Preference | Go For | Why |
|---|---|---|
| Big, rich flavour | Fatty Biltong | Juicy, indulgent, perfect with beer |
| High protein, low fat | Lean Biltong | Clean, simple, great for training or dieting |
| Long shelf life | Lean Biltong | Less moisture = longer lasting |
| Softer texture | Fatty Biltong | The fat keeps it tender |
| Chewier bite | Lean Biltong | Drier, firmer, classic chew |
How to Store Each Type of Biltong
Our Biltong is shelf stable, meaning it doesn't require any refridgeration, even after opening a packet. We do suggest the below storage guide to help maintain the quality of biltong over time (although, in all honesty, it wont last long once you crack open a bag)!
Fatty biltong does hold more moisture thanks to those delicious slices of fat cap so a little more care can keep it that mouthwateringly juicy over time :
- Keep it in a cool, dry spot
- Avoid sunlight or heat — fat can oxidise over time
- Use airtight containers for long storage
Lean biltong is a little more forgiving as its not as juicy but similar storage tricks should be followed for ultimate freshness:
- Store in a pantry or cupboard
- Use airtight containers for long storage
Either way — store it right and your biltong will stay fresh for yonks!
